Ingredients

1 beef brisket, about 2 kg

Salt and black pepper to taste

2 tablespoons olive oil

1 large onion, sliced

4 garlic cloves, minced

2 cups beef broth

1 cup red wine (optional)

1/4 cup Worcestershire sauce

2 tablespoons balsamic vinegar

2 tablespoons brown sugar

1 tablespoon Dijon mustard

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 bay leaves

Preparation


  1. Preheat your oven to 300°F (150°C).

  2. Pat the beef brisket dry with paper towels and season it generously with salt and black pepper on both sides.

  3. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.

  4. Sear the brisket in the pot until it's browned on all sides, about 5-7 minutes per side. Remove the brisket from the pot and set it aside.

  5. In the same pot, add the sliced onion and minced garlic. Sauté until the onions are soft and translucent.

  6. Pour in the beef broth, red wine (if using), Worcestershire sauce, balsamic vinegar, brown sugar, Dijon mustard, paprika, dried thyme, dried rosemary, and bay leaves. Stir to combine and bring the mixture to a simmer.

  7. Return the seared brisket to the pot, nestling it into the liquid and onions. Spoon some of the liquid over the top of the brisket.

  8. Cover the pot with a lid and transfer it to the preheated oven. Let the brisket cook in the oven for about 3-4 hours, or until it's fork-tender and easily pulls apart.

  9. Once the brisket is cooked, remove it from the pot and let it rest on a cutting board for about 15 minutes before slicing.

  10. While the brisket rests, you can strain the cooking liquid and onions to make a flavorful gravy. Simply discard the bay leaves and any solids, then pour the liquid into a saucepan. Simmer the gravy over medium heat until it thickens slightly.

  11. Slice the brisket against the grain into thin slices. Serve the sliced brisket with the gravy on the side or drizzled over the top.

  12. Garnish with fresh chopped parsley or rosemary if desired, and enjoy your delicious beef brisket!
