Ingredients
4 large parsnips, peeled and cut into batons
2 tbsp olive oil
1 tbsp honey (or maple syrup for a vegan option)
1 tsp fresh thyme (or ½ tsp dried thyme)
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder (optional)
1 tbsp butter (or dairy-free alternative)
1 tbsp balsamic vinegar (optional, for added depth of flavor)
Preparation
Preheat the oven to 400°F (200°C).
In a large bowl, toss the parsnip batons with olive oil, honey, thyme, salt, pepper, and garlic powder.
