Ingredients


  • 4 large parsnips, peeled and cut into batons

  • 2 tbsp olive oil

  • 1 tbsp honey (or maple syrup for a vegan option)

  • 1 tsp fresh thyme (or ½ tsp dried thyme)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp garlic powder (optional)

  • 1 tbsp butter (or dairy-free alternative)

  • 1 tbsp balsamic vinegar (optional, for added depth of flavor)


Preparation


  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the parsnip batons with olive oil, honey, thyme, salt, pepper, and garlic powder.

  3. Spread them out on a baking sheet in a single layer.

  4. Roast forĀ 25-30 minutes, flipping halfway through, until golden brown and caramelized.

  5. Remove from the oven and toss with butter and balsamic vinegar for extra richness.

  6. Serve warm as a side dish or snack.
