Ingredients
1 kg pork shoulder or pork loin, cut into 1-inch cubes
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, chopped
2 potatoes, peeled and diced
1 can (14 ounces) diced tomatoes, undrained
4 cups chicken or vegetable broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)
Preparation
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the pork cubes to the pot and cook until browned on all sides, about 5-7 minutes. Remove the pork from the pot and set aside.
In the same pot, add the chopped onion and sauté until softened and translucent, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Return the browned pork to the pot. Add the sliced carrots, chopped celery, and diced potatoes.
Pour in the diced tomatoes with their juices and the chicken or vegetable broth. Stir to combine.
Season the stew with dried thyme, dried rosemary, salt, and pepper. Stir well to distribute the seasonings.
Bring the stew to a simmer, then reduce the heat to low. Cover the pot and let the stew simmer gently for about 1.5 to 2 hours, or until the pork is tender and the vegetables are cooked through.
Taste the stew and adjust the seasoning if needed with more salt and pepper.
Once the pork is fork-tender and the flavors have melded, remove the pot from the heat.
