Ingredients

500g large prawns, peeled and deveined

2 tablespoons olive oil

Zest of 1 lemon

Juice of 1 lemon

2 cloves garlic, minced

1 tablespoon chopped fresh parsley

1 tablespoon chopped fresh thyme

Salt and pepper to taste

Wooden skewers, soaked in water (if using)

Preparation

If the prawns are frozen, thaw them completely and pat them dry with paper towels.

If using wooden skewers, soak them in water for about 30 minutes to prevent burning during grilling.

In a bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, chopped thyme, salt, and pepper.

Place the prawns in a shallow dish or a resealable plastic bag.

Pour the marinade over the prawns, making sure they are evenly coated. Cover the dish or seal the bag and refrigerate for at least 30 minutes to marinate. You can marinate them for up to 2 hours for more flavor.

Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.

Thread the marinated prawns onto the soaked wooden skewers, leaving a little space between each prawn. This helps them cook evenly and makes them easier to handle on the grill.

Place the skewered prawns directly on the preheated grill. Cook for about 2-3 minutes per side, or until the prawns are pink and opaque with grill marks. Avoid overcooking, as prawns can become tough if cooked for too long.

Once grilled, remove the prawns from the skewers if using, and transfer them to a serving platter.

Garnish with additional chopped herbs and lemon wedges for squeezing over the prawns before serving.

These grilled lemon and herb prawns make a fantastic appetizer or main course. Serve them with a side of rice, salad, or grilled vegetables for a complete and delicious meal. Enjoy the bright and zesty flavors of this dish!
