Veggie skewers, also known as vegetable skewers or kebabs, are a colorful and flavorful dish made from a variety of fresh vegetables threaded onto skewers and grilled to perfection.
Veggie skewers are not only delicious and easy to make but also a healthy option packed with vitamins, minerals, and fiber. They are perfect for summer barbecues, outdoor gatherings, or anytime you want a colorful and satisfying vegetable dish.

Tips:
- Soak wooden skewers in water for about 30 minutes before threading the vegetables onto them. This helps prevent the skewers from burning on the grill.
- Use a variety of vegetables for texture and flavor contrast. Bell peppers add sweetness, zucchini and mushrooms add a meaty texture, cherry tomatoes add juiciness, and onions add a savory bite.
- Don't overcrowd the skewers. Leave some space between the vegetables to allow for even cooking and caramelization.

Ingredients

Assorted vegetables (bell peppers, zucchini, mushrooms, cherry tomatoes, onions, etc.), cut into chunks

Olive oil

Salt and black pepper, to taste

Optional: herbs and spices (such as garlic powder, paprika, or Italian seasoning)

Preparation


  1. Preheat your grill to medium heat. While the grill is heating up, prepare your vegetables by cutting them into uniform-sized chunks. This ensures even cooking on the skewers.

  2. In a bowl, toss the vegetable chunks with olive oil to coat them evenly. Season with salt, black pepper, and any desired herbs or spices for added flavor.

  3. Thread the seasoned vegetable chunks onto skewers, alternating different vegetables to create colorful and visually appealing skewers. Leave a little space between each piece to ensure even cooking.

  4. Lightly brush the grill grates with olive oil to prevent sticking. Place the veggie skewers on the grill and close the lid. Grill for about 8-10 minutes, turning occasionally, or until the vegetables are tender and lightly charred.

  5. If desired, you can brush the veggie skewers with a glaze or sauce during grilling for extra flavor. Barbecue sauce, teriyaki sauce, or a balsamic vinegar glaze are popular choices.

  6. Carefully remove the grilled veggie skewers from the grill and transfer them to a serving platter. Garnish with fresh herbs like chopped parsley or cilantro for a finishing touch.

  7. Serve the veggie skewers hot as a flavorful and nutritious side dish or as a vegetarian main course. They pair well with rice, quinoa, or a fresh salad.
