About the Recipe

Congee, also known as rice porridge, is a classic dish in Chinese cuisine that’s beloved for its simplicity and comfort. It’s made by simmering rice in a large amount of water or broth until the grains break down into a creamy, smooth texture. Often enjoyed as a breakfast food, it can also serve as a soothing meal when you’re feeling under the weather, much like chicken soup in Western cultures.
The basic ingredients for congee are just rice and water or broth, but it can be customized with various toppings and flavors. It’s a dish that truly embodies the concept of comfort food, offering a warm and nourishing experience with every spoonful. Enjoy it plain or dress it up with your favorite ingredients to make it your own!

Ingredients

1 cup raw long-grain white rice (rinsed)

7 cups vegetable stock (or chicken stock)

½ teaspoon sea salt (or kosher salt, plus more for seasoning)

1-inch knob of ginger (peeled and sliced thin)

Green onion (sliced, for garnish)

Soy sauce or sesame seed oil (optional)

Preparation

Rinse and wash the rice, then soak it in water for 30 minutes; drain.

  1. In a large pot, bring the rice and 8 cups of water or stock to a boil.

  2. Reduce heat to medium-low, cover with a tilted lid, and simmer until the rice breaks down into a pudding-like consistency (about 1.5 hours).

  3. Add minced ginger, garlic, or other flavorings if desired.

  4. Serve hot, garnish with green onions and a drizzle of soy sauce or sesame seed oil.
