½ cup Chia Seeds

2 cups Milk (or non-dairy milk)

4 tablespoons Peanut Butter (or almond butter)

1 pint Blueberries (plus more for garnish)

1 tablespoon Maple Syrup (or honey)

3 tablespoons Pistachios (chopped, for garnish)

Preparation

In a bowl, mix the chia seeds with the milk and let it sit for about 4 hours or until it achieves a pudding-like consistency.
