Ingredients

500 g Salted butter

60 ml mixed fresh herbs, chopped

Black pepper to taste

Preparation

Soften the butter, breaking up any lumps with a wooden spoon. Don't use completely melted butter, as the oil will separate from the milk solids.

Before stirring in hard herbs such as thyme and rosemary, blanch them in some boiling water. Softer herbs such as chives, dill, fennel, and parsley need to be blanched.

Chop the herbs roughly or snip the chives into little rings with a sharp pair of scissors.

Stir herbs into softened butter.

Scoop the butter into some plastic wrap and gently roll it into a sausage before tying the sides into knots.

Butter keeps well in the fridge. Store some extras in the freezer for up to 3 months.
