Ingredients
Ingredients for the Cake:
2 cups all-purpose flour
2 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1 cup vegetable oil
1 1/2 cups granulated sugar
1/2 cup brown sugar
4 large eggs
2 cups grated carrots
1 cup chopped walnuts (optional)
1/2 cup crushed pineapple (optional)
For the cream cheese frosting:
1/2 cup unsalted butter, softened
8 oz cream cheese, softened
4 cups powdered sugar
2 tsp vanilla extract
Preparation
Instructions for the Cake:
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
In a large bowl, whisk together flour, baking soda, salt, and cinnamon.
In another bowl, mix together oil, granulated sugar, brown sugar, and eggs until well combined.
Stir in the grated carrots and, if using, walnuts and pineapple.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Pour the batter into the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Instructions for the frosting:
Beat together butter, cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Once the cakes are cool, spread frosting between the layers and over the top of the cake.
