Ingredients
For the Pastry Crust:
1 1/4 cups all-purpose flour
1/2 cup cold unsalted butter, cut into small cubes
1/4 cup granulated sugar
1 egg yolk
2-3 tablespoons ice water
For the Filling:
2 cups fresh berries (such as strawberries, blueberries, raspberries)
1/2 cup granulated sugar
1/4 cup cornstarch
1 tablespoon lemon juice
Zest of 1 lemon
1 teaspoon vanilla extract
Pinch of salt
Preparation
Prepare the Pastry Crust:
In a food processor, combine the flour and cold butter cubes. Pulse until the mixture resembles coarse crumbs.
Add the granulated sugar and pulse again to combine.
Add the egg yolk and 2 tablespoons of ice water. Pulse until the dough comes together. If needed, add another tablespoon of ice water until the dough forms a ball.
Flatten the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat your oven to 375°F (190°C).
On a lightly floured surface, roll out the chilled pastry dough into a circle slightly larger than your tart pan.
Carefully transfer the rolled-out dough to a 9-inch tart pan with a removable bottom. Press the dough into the bottom and sides of the pan, trimming any excess dough from the edges.
Prepare the Filling:
In a bowl, combine the fresh berries, granulated sugar, cornstarch, lemon juice, lemon zest, vanilla extract, and a pinch of salt. Toss everything together until the berries are coated evenly.
Spread the berry mixture evenly over the prepared pastry crust in the tart pan.
Bake the Tart:
Place the tart pan on a baking sheet to catch any drips.
Bake the tart in the preheated oven for about 35-40 minutes, or until the crust is golden brown and the filling is bubbly and thickened.
If the edges of the crust start to brown too quickly, you can cover them with foil halfway through baking.
Cool and Serve:
Once baked, remove the tart from the oven and let it cool completely on a wire rack.
Once cooled, carefully remove the tart from the pan and place it on a serving plate.
Serve the tart slices at room temperature or chilled, optionally dusted with powdered sugar and garnished with fresh berries or whipped cream.
This berry tart is a delightful treat, perfect for showcasing seasonal fruits and enjoying with friends and family. Its buttery crust and fruity filling make it a standout dessert for any occasion!
