450g boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 cup plain yogurt

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon turmeric powder

1/2 teaspoon chili powder (adjust to taste)

Salt to taste

1 tablespoon vegetable oil


For the Sauce:

2 tablespoons butter

1 tablespoon vegetable oil

1 large onion, finely chopped

2 teaspoons ginger-garlic paste

1 can (14 ounces) crushed tomatoes

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garam masala

1/2 teaspoon paprika (optional, for extra color)

1/2 teaspoon red chili powder (adjust to taste)

Salt to taste

1/2 cup heavy cream

Fresh cilantro leaves for garnish

Preparation

Marinate the Chicken:

  • In a bowl, combine the yogurt, ginger-garlic paste, ground cumin, ground coriander, turmeric powder, chili powder, salt, and vegetable oil.

  • Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or ideally up to 4 hours for more flavor.



Cook the Chicken:

  • Preheat your oven to 400°F (200°C).

  • Arrange the marinated chicken pieces on a baking sheet lined with parchment paper. Bake for about 15-20 minutes or until the chicken is cooked through and slightly charred. You can also grill or pan-sear the chicken if preferred.
