Ingredients

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup milk (you can use whole milk for a richer sauce)

1 cup shredded cheese (Cheddar, Gouda, or any melting cheese of your choice)

Salt and pepper to taste

Optional: a pinch of nutmeg or paprika for added flavor

Preparation

  1. Melt the butter in a saucepan over medium heat.

  2. Add the flour to the melted butter and whisk continuously for about 1-2 minutes to create a roux. Cook until the roux is lightly golden in color.

  3. Gradually pour in the milk while whisking constantly to avoid lumps. Continue cooking and whisking until the mixture thickens, about 2-3 minutes.

  4. Reduce the heat to low and add the shredded cheese to the sauce. Stir until the cheese is completely melted and the sauce is smooth and creamy.

  5. Season the sauce with salt, pepper, and any optional spices like nutmeg or paprika. Taste and adjust the seasoning as needed.

  6. Remove the saucepan from heat and let the cheese sauce sit for a minute or two to thicken slightly before serving.
