About the Recipe

Vanilla muffins are a delightful and classic treat, perfect for breakfast, brunch, or a snack any time of the day. These muffins are known for their moist, fluffy texture and vanilla's rich, aromatic flavor.

They can be enjoyed plain or used as a base for various add-ins like chocolate chips, berries, or nuts. Vanilla muffins are also a fantastic option for those who enjoy baking, as they are simple to make and require basic ingredients that are often found in most kitchens.

Ingredients

2 cups (250g) all-purpose flour

1/2 cup (100g) granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup (240ml) milk (you can use any type, such as whole milk or almond milk)

1/2 cup (120ml) vegetable oil or melted butter

2 large eggs

1 teaspoon vanilla extract (optional)

1 cup of your favorite add-ins (such as blueberries, chocolate chips, diced fruits, nuts, etc.)

Preparation

Preheat Oven and Prepare Muffin Pan:

  • Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin pan with paper liners.


Mix Dry Ingredients:

  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.


Combine Wet Ingredients:

  • In a separate bowl, whisk together the milk, vegetable oil or melted butter, eggs, and vanilla extract (if using) until smooth and well combined.


Combine Wet and Dry Ingredients:

  • Pour the wet ingredients into the bowl of dry ingredients. Use a spatula or wooden spoon to gently fold and mix everything together until just combined. Do not overmix; a few lumps in the batter are okay.


Add Add-Ins:

  • Gently fold in your chosen add-ins, such as blueberries, chocolate chips, diced fruits, or nuts, until evenly distributed throughout the batter.


Fill Muffin Cups:

  • Divide the batter evenly among the prepared muffin cups, filling each cup about 2/3 to 3/4 full.


Bake Muffins:

  • Place the muffin pan in the preheated oven and bake for 18-22 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.



Cool and Serve:

  • Once baked, remove the muffin pan from the oven and allow the muffins to cool in the pan for 5 minutes.

  • Transfer the muffins to a wire rack to cool completely or serve them warm.
