Ingredients
Ingredients:
1 large bunch of collard greens, stems removed, leaves chopped
2 tablespoons olive oil or bacon grease
1 small onion, diced
3 cloves garlic, minced
4 cups chicken or vegetable broth
1 smoked turkey leg, ham hock, or 4 slices cooked bacon (optional)
1 teaspoon smoked paprika
½ teaspoon red pepper flakes (adjust to taste)
2 tablespoons apple cider vinegar
Salt & black pepper to taste
Preparation
In a large pot, heat olive oil or bacon grease over medium heat. Add onions and cook until softened, about 3 minutes. Stir in garlic and cook for another 30 seconds.
Toss in the chopped collard greens and stir well to coat with the oil and aromatics.
Pour in the broth, add the smoked turkey leg (or bacon), and season with smoked paprika, red pepper flakes, salt, and black pepper. Bring to a gentle boil.
Reduce heat to low, cover, and let simmer for 45–60 minutes, stirring occasionally until the greens are tender and flavorful.
Stir in apple cider vinegar for a bright, tangy finish. Adjust seasoning if needed.
Serve warm with cornbread, rice, or your favorite comfort food.
