Ingredients
1 lb bok choy, trimmed and halved lengthwise
2 tbsp olive oil or sesame oil
3 cloves garlic, minced
1-inch piece ginger, grated (optional)
2 tbsp soy sauce (or tamari for gluten-free)
1 tsp sesame seeds (for garnish)
1 tsp honey or maple syrup (optional, for a touch of sweetness)
1/2 tsp red pepper flakes (optional, for heat)
1 tbsp water (if needed)
Preparation
Wash the bok choy thoroughly and pat dry.
Slice large bok choy heads in half lengthwise for even cooking.
Heat olive oil or sesame oil in a large skillet or wok over medium heat.
Add minced garlic and ginger, stirring for 30 seconds until fragrant.
Add the bok choy to the pan, cut side down.
Cook for 2–3 minutes until the stems begin to soften.
Add soy sauce, honey (if using), and red pepper flakes.
Toss well and cover for another 2–3 minutes, adding 1 tbsp water if needed.
Remove from heat and sprinkle with sesame seeds.
Drizzle with extra sesame oil for more flavor.
Serve immediately with rice, noodles, or grilled protein.
