Ingredients
2 large ripe mangoes, peeled, pitted, and diced
1 medium red onion, finely chopped
1/2 cup raisins or sultanas
1/4 cup white vinegar
1/4 cup brown sugar
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground cumin
1/4 teaspoon red pepper flakes (adjust to taste)
Salt to taste
Preparation
In a large saucepan or pot, combine the diced mangoes, chopped red onion, raisins or sultanas, white vinegar, brown sugar, ground ginger, ground cinnamon, ground cloves, ground cumin, red pepper flakes, and a pinch of salt.
Stir well to combine all the ingredients.
Place the saucepan over medium-high heat and bring the mixture to a boil, stirring frequently.
Once boiling, reduce the heat to low and let the chutney simmer uncovered for about 30-40 minutes, or until the mangoes are tender and the mixture has thickened to a desired consistency. Stir occasionally to prevent sticking.
Taste the chutney and adjust the seasoning, adding more salt or red pepper flakes if needed for your preference.
Remove the saucepan from heat and let the mango chutney cool to room temperature.
Once cooled, transfer the mango chutney to clean, sterilized jars with tight-fitting lids.
Seal the jars tightly and store them in the refrigerator. The mango chutney will continue to develop flavor over time and can be kept refrigerated for several weeks.
Serve the mango chutney as a delicious condiment alongside curries, grilled meats, sandwiches, cheese platters, or as a flavorful topping for appetizers.
This homemade mango chutney is bursting with sweet, tangy, and spicy flavors that complement a wide range of dishes. Enjoy its vibrant taste and versatility in adding a tropical twist to your meals!
