Ingredients

  • 1 head romaine or butter lettuce, washed and torn into bite-sized pieces

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cucumber, thinly sliced

  • 1/4 red onion, thinly sliced

  • 1/4 cup feta cheese (optional, for a creamy touch)

  • 1/4 cup toasted almonds or sunflower seeds for crunch

  • 1/4 cup fresh herbs (parsley, basil, or dill) for added freshness


Lemon Dressing:

  • 3 tbsp olive oil

  • 1 1/2 tbsp fresh lemon juice

  • 1 tsp honey or maple syrup

  • 1/2 tsp Dijon mustard

  • 1 small clove garlic, minced

  • Salt and black pepper, to taste

Preparation

  1. In a small bowl or jar, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic, salt, and black pepper.

  2. In a large bowl, combine lettuce, cherry tomatoes, cucumber, red onion, and fresh herbs.

  3. Drizzle the dressing over the salad and toss gently to coat.

  4. Sprinkle with feta cheese and toasted almonds or sunflower seeds.

  5. Serve fresh as a side dish or top with grilled chicken, shrimp, or chickpeas for a complete meal.
